EMENTA DA DISCIPLINA:

Contaminação, legislação e segurança alimentar. Propriedades físicas químicas, bioquimismo, toxicidade/ mutagenicidade, bases moleculares da biotransformação.  Controle, metodologia analítica para monitoramento e processos de detoxificação/ fatores anticancerígenos em alimentos.

PROGRAMA DE DISCIPLINA

                        Princípios básicos sobre micotoxinas/ficotoxinas (toxinas naturais) na segurança alimentar. Matéria prima agropecuária e água na cadeia produtiva de alimentos. Fungos micotoxigênicos e cianobactérias ficotoxigênicas como produtores de metabólitos secundários: semelhança entre componentes de interesse industrial  com toxinas. Fungos produtores de micotoxinas e surtos de intoxicação humana e animal. Fungo de campo e estocagem: fatores que influem na produção de micotoxinas. Pontos estratégicos na produção de alimentos. Micotoxinas de Claviceps spp., Aspergillus spp., Fusarium spp., Penicillium spp., Alternaria spp. Ficotoxinas hepatotóxicas, neurotóxicas e dermatotóxicas. Toxinas de cianobactérias, com ênfase a microcistinas em água. Estrutura química, propriedades físico-químicas e toxicidade. Métodos de detecção físico-química, biológica e imunológica. Monitoramento e metodologia analítica no controle de micotoxinas/ficotoxinas. Câncer  e mutagenicidade. Testes de Ames, SOS  cromoteste. Ativação das toxinas pelo metabolismo hepático: base molecular da biotransformação a nível microssomal. Controle das micotoxicoses, processos de detoxificação e destino de produtos contaminados com micotoxinas.
